Sweet Bacon Jam Buns Brigade November 25 2013

- 1/2 cup room temperature water
- 2/3 cup sugar
- 1-1/2 cup milk
- 1/2 stick warm butter
- 6 egg yolks
- 8-1/2 cups flour
- 1/2 oz active yeast
- 1-1/2 cup milk
- 2-1/2 tsp salt
- 20 oz The Bacon Jams All Original Spreadable Bacon
- 1 stick butter
- 2 tbsp cinnamon
- 6 tbsp honey
- 2 tbsp dark corn syrup
- 1/8 cup water
Mix water yeast and 1 tablespoon sugar and let sit for 6 minutes. Blend milk, butter, egg yolks, salt, the rest of the sugar and 6 cups of flour into the yeast and water mixture. Knead the dough while adding in the remaining flour. The dough should be tacky. Knead the dough into a ball and coat it with butter by rolling it in a buttered bowl. Cover and let sit until it has doubled in size, which should take roughly 1.5 hours.
After the dough has risen, separate it into 2 halves. Punch each half of dough down and roll them out to 12x18” rectangles on a lightly-floured cutting board, let sit while you make the filling. Blend 10 oz of The Bacon Jams All Original Spreadable Bacon, 1/4 stick butter and the cinnamon together. Spread this bacon mixture evenly over the two pieces of dough. Roll the dough tightly long ways. Let sit for one hour, or until the dough has risen. Cut each roll into about 8 round pieces. Preheat the oven to 375 degrees.
Beat the remaining bacon jam, honey, corn syrup, water and butter together in a sauce pan, warming on low. Pour half of the glaze into one or two baking pans (you will want the buns to fit snuggly in the pans so that they all touch).Place the rolls into the pans, flat side down. Spread the remaining glaze over the tops and pop them in the oven for 30-35 minutes or until you smell sweet, caramelized bacon. Serve hot or cold, but soak pans before eating. You are about to go into a food coma!
